Knead with lukewarm water
Use lukewarm water and a small spoon of ghee while kneading for softer rotis.
Rest the dough for 30 minutes
Cover and rest before rolling. This is the single biggest difference from regular atta — don't skip it.
Roll and cook as usual

Pro tip: Add one tablespoon of curd while kneading for extra softness. For even softer rotis, refrigerate the dough overnight before rolling.
